*Gingerbread Cookies Ingredients: 3 cups pastry flour or spelt flour 1 tbsp aluminium free baking powder 2 tsp powdered ginger 2 tsp fresh ginger juice 1 ½ tsp cinnamon, ½ tsp nutmeg, ½ tsp cloves, ½ tsp mace. ½ tsp salt ½ cup light vegetable oil ½ cup maple syrup ¼ cup barley malt syrup 1/3 cup grain coffee powder raisins for decoration Method: v Preheat oven to gas mark 6, 200°C. Line baking sheets with baking paper or brush with oil. v Mix dry ingredients (apart from grain coffee). Whisk together wet ingredients (plus the grain coffee). Mix wet with dry. You can either add the raisins at this stage or decorate with them later. v Roll out the dough ¼ inch thick and cut out shapes with cookie cutters. v Bake until golden on the bottom – about 10 to 12 mins. |
